Shelled prawns are culled with a very high heat shock: processing is done quickly without rinsing or glazing to maintain all the freshness of the product.
The convenience of Don Gambero’s “Ready to Use”: thawing the product will only take about ten minutes in cold water, after which you simply pull out the tails, which will have retained all their freshness.
