Pink Shrimp Tartare is processed from shrimp tails in certified fishing boat labs, the tails are blast chilled with a very high heat shock: processing is done quickly without rinsing or glazing to maintain all the freshness of the product.

What makes Mediterranean pink shrimp special?
The pink shrimp Parapenaeus longirostris is fished at a depth of 150 mt and is a crustacean with small size and sweet, flavorful flesh. Considered the least noble of the Mediterranean crustaceans, it is actually a genuine and tasty product characteristic of Italian cuisine.
