What makes Mediterranean purple prawns special?
The shell that protects the prawn is thinner than that of the red shrimp, and the upper part above the head has 3 prongs (as opposed to 5 in the red shrimp). The purple prawn is a very rare crustacean that lives in very deep waters, up to 1,500 meters. Highly valued in all traditional Mediterranean cuisines, it is recommended, as with red prawns, to eat it raw.
