What makes Mediterranean Yellowfin Tuna Bottarga special?
Bottarga is a food made from the fish’s ovary, whose eggs are salted and dried using traditional processes. The egg sac is extracted from the female fish and taking care not to break it, it is washed to remove impurities and then salted (covered with sea salt, being sure to turn the sacs daily and replace the salt periodically), pressed and cured.
